New organic eatery in Boulder

Boulder Organic Pizzeria (BOP) has opened its doors to the public, providing the downtown area with delicious sustainable food and drinks in a relaxing atmosphere. Located conveniently at 1175 Walnut, BOP features affordable sustainable Southern Italian dining and drinks for eco-conscious Boulderites. BOP will be open for lunch, happy hour, dinner, late night, and the inventive menu will also offer many gluten-free options.

Executive Chef Giuseppe Monaco uses only the freshest local and sustainable ingredients to create traditional Italian cuisine. Growing up on the island of Capri, Italy, Monaco began studying in culinary school at the age of 14 and has always prepared what was locally available each season.

The menu at BOP highlights products from local farms and will change with the seasons. Samples of the spring menu include:

Mista – Our signature mixed baby greens salad, dressed with a classic lemon basil vinaigrette in the style of Capri

Hazel Dell Pizza – Delicious local mushrooms, fresh mozzarella, tomato sauce, and Italian parsley make this stone-fired pizza as delicious as it is sustainable

Mezza Luna – A ‘half moon’ hybrid of calzone and pizza, stuffed and topped with a variety of local, organic ingredients

Chef Giuseppe Monaco enjoys working with local producers and looks forward to introducing customers to local, organic, conscious cuisine. Monaco promises, “healthy, fresh, natural … just like the food I ate growing up.”
